  • Juice of 2 large lemons (about 80ml)
  • 2 tbsp simple syrup (equal parts sugar and water, dissolved)
  • 200ml sparkling or still water
  • A pinch of fleur de sel (sea salt flakes)
  • Ice

    SqueezeSqueeze lemons into a short glass. Remove any seeds.

    BuildTraditionally: place the glass of lemon juice on the table alongside a small jug of sugar syrup and a carafe of water, letting the drinker mix to taste.

About This Drink

The Citron Pressé is the non-alcoholic staple of every French café — served since the early 20th century. The traditional presentation is a short glass of squeezed lemon juice, a separate small jug of simple syrup, and a carafe of still or sparkling water. You control the balance. It is the most honest and elegant of all simple drinks.

The fleur de sel is the secret — a tiny pinch of good sea salt amplifies the lemon without making it taste salty. Use unwaxed lemons for the best flavour and healthiest zest. The French version uses still water; the Belgian café version uses sparkling (the 'limonade' version).
