Date molasses, rose water & pine nuts — Lebanon's most celebrated drink
Jallab traces its roots to the Levantine tradition of fruit syrups served at markets and coffeehouses. The name derives from the Arabic word for 'attract' — the drink is that alluring. Date molasses (dibs tamr) gives it a deep, earthy sweetness that no fruit syrup can replicate.
Rose water is potent — start with ½ tsp and adjust. Date molasses is available at Middle Eastern grocery stores; pomegranate molasses can substitute at a pinch. Slivered almonds are a traditional alternative to pine nuts.
