  • 3 Persian limes (or 5 key limes), quartered
  • 2 tbsp sweetened condensed milk
  • 200ml cold water
  • 1 tbsp sugar
  • 2 cups crushed ice

    BlendBlend lime quarters (skin on), condensed milk, sugar, water, and ice for exactly 5–10 seconds — not more. Over-blending makes it bitter.

    StrainStrain immediately through a fine sieve. The longer the pulp sits, the more bitter it becomes.

About This Drink

Limonada Suíça (Swiss Lemonade) is ubiquitous at Brazilian churrascarias — the name 'Swiss' is a mystery, as the drink has no Swiss connection whatsoever. The technique of blending the whole lime — skin and all — is the Brazilian innovation. The peel adds a bitter, aromatic complexity that transforms it from a simple creamy drink into something genuinely complex.

5–10 seconds of blending only — the peel releases bitter compounds rapidly. Strain immediately. For a lighter version, use regular milk instead of condensed milk and add more sugar to taste. For a Limonada na Pressão (the simpler version), skip condensed milk and just blend limes, sugar, and ice.
