Matcha has been central to Japanese culture since the 12th century — prepared with near-ceremonial precision by Buddhist monks as a meditation aid. The Mojito is Cuba's most famous drink. The whisking step is essential — unwhisked matcha will be bitter and lumpy. Use ceremonial grade (bright green) rather than culinary grade (yellower, more bitter). For a creamier version, replace sparkling water with coconut milk — a Japanese-Thai mashup that works beautifully.
