  • 2 tbsp hot water (not boiling — 80°C)
  • 10 fresh mint leaves
  • Juice of 1 lime
  • 2 tsp simple syrup or honey
  • 200ml sparkling water
  • Ice & mint sprig to garnish

    Whisk matchaSift matcha into a small bowl. Add hot water and whisk in a W-pattern until smooth and frothy with no lumps.

About This Drink

Matcha has been central to Japanese culture since the 12th century — prepared with near-ceremonial precision by Buddhist monks as a meditation aid. The Mojito is Cuba's most famous drink. Their combination feels unlikely but works because both are built on the same principle: green freshness, acidity, and sparkling water.

The whisking step is essential — unwhisked matcha will be bitter and lumpy. Use ceremonial grade (bright green) rather than culinary grade (yellower, more bitter). For a creamier version, replace sparkling water with coconut milk — a Japanese-Thai mashup that works beautifully.
