Mauby bark, cinnamon, anise, orange peel & sparkling water

  • 2 tbsp dried mauby bark
  • 1 cinnamon stick
  • 3 whole star anise
  • 1 tsp fennel seeds
  • Orange peel (1 strip)
  • 500ml water
  • 3 tbsp brown sugar
  • Sparkling water & ice to serve

    BoilCombine mauby bark, cinnamon, star anise, fennel, and orange peel with water. Bring to boil, then simmer 15 minutes.

    SteepRemove from heat and steep a further 10 minutes.

    StrainStrain through a fine sieve. Add brown sugar while warm and stir to dissolve.

    ChillCool completely and refrigerate.

    ServePour 60ml concentrate over ice and top with sparkling water. Adjust concentrate to taste.

About This Drink

Mauby is made from the bark of the Colubrina elliptica tree, known as the mauby tree. It has the most complex flavour profile of any non-alcoholic drink in the Caribbean — initially sweet, then intensely bitter, then mysteriously satisfying. Every Barbadian vendor has a slightly different recipe, and the debate over ginger vs no ginger is fierce.

Mauby bark is available at Caribbean grocery stores. The bitterness intensifies with longer brewing — 15 minutes gives a balanced drink. Taste the concentrate before adding more water — it's intensely bitter and needs diluting. If the first sip makes you wince, that's correct — by the third sip you'll want another.
