Prickly pear cactus fruit, lime, honey & sparkling water

  • 4–5 ripe prickly pears (tunas), peeled
  • Juice of 2 limes
  • 1 tbsp honey or agave
  • ½ litre sparkling water or still water
  • Ice & lime slices to garnish

    JuiceBlend prickly pears until smooth. Strain through a fine sieve — the seeds are numerous and tough.

    MixCombine the strained juice with lime juice and honey. Stir well.

    DiluteAdd cold water to taste.

    ServePour over ice. Top with sparkling water. Garnish with lime.

About This Drink

The prickly pear (tuna in Spanish) is the fruit of the Opuntia cactus, which has been growing in Mexico for thousands of years. Its magenta pigment — betacyanin — turns everything it touches a vivid fuchsia. The flavour is mild, melon-like, and subtly earthy.

Handle prickly pears with tongs and gloves — the skin has tiny hair-like spines (glochids) that are difficult to remove from skin. Ripe fruit is deep magenta-red and gives slightly when pressed. For a spiced version, add a pinch of cinnamon and cayenne.
