  • 2 sprigs fresh thyme
  • ½ tbsp honey
  • 1 oz (30ml) orange juice
  • ½ oz (15ml) lemon juice
  • Sparkling water to top
  • Ice, orange slice & thyme sprig to garnish

About This Drink

Thyme's woody, faintly medicinal fragrance is a surprising companion to the sweetness of strawberries — but the combination has ancient roots. Medieval herbalists mixed strawberries and thyme as a digestive remedy. Modern craft bartenders rediscovered the pairing in the 2010s and turned it into one of the most sought-after non-alcoholic menu items.

Use ripe, fragrant strawberries — a bland strawberry makes a bland drink. Strip the thyme leaves rather than muddling the full stem — the woody part of the stem can add bitterness. For a more herbal version, replace thyme with fresh basil. Both elderflower cordial and vanilla extract enhance this drink beautifully.
