Ingredients
- 75 mlLight white rum
- 22.5 mlFino sherry
- 7.5 mlMaraschino liqueur
- 7.5 mlLemon juice
- 7.5 mlSugar syrup (2:1)
- 1 dashAromatic bitters
- 15 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a MARTINI GLASS.
- 2Prepare garnish of orange zest twist and Luxardo Maraschino Cherry.
- 3SHAKE all ingredients with ice.
- 4STRAIN back into shaker.
- 5DRY SHAKE (without ice) to emulsify.
- 6FINE STRAIN into chilled glass.
- 7Express orange zest twist over cocktail and discard. Garnish with maraschino cherry.
