- 37.5 mlAmaro (e.g. Nardini)
- 22.5 mlPisco
- 7.5 mlAmericano bianco
- 15 mlLemon juice
- 15 mlEgg white (pasteurised)

Select and pre-chill a COUPE GLASS.

Prepare garnish of coin-sized lemon zest twist.

SHAKE all ingredients with ice and strain back into shaker.

DRY SHAKE (without ice) to emulsify.

STRAIN into chilled glass.

EXPRESS lemon zest twist over the cocktail and float for garnish.
