  • 60 mlCachaça
  • 15 mlLime juice
  • 7.5 mlLemon juice
  • 15 mlSugar syrup (2:1)
  • 20 mlEgg white (pasteurised)
  • 6 dropGinseng bitters
  • 3 dropSaline solution 4:1

    Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.

    Prepare garnish of aromatic bitters.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.

    DRIP aromatic bitters onto cocktail and bull through the foamy head with a cocktail stick.
