  • 45 mlScotch whisky
  • 15 mlPeated malt whisky
  • 15 mlMarshmallow syrup
  • 22.5 mlLemon juice
  • 15 mlEgg white (pasteurised)
  • 3 dropSaline solution 4:1

    Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.

    Prepare garnish of peated whisky (in atomiser) and skewered toasted marshmallow.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.
  5. 5
    FINE STRAIN into chilled glass.
  6. 6
    Spray surface with peated whisky and garnish with skewered marshmallow.
