  • 22.5 mlFernet liqueur
  • 22.5 mlLime juice
  • 15 mlDark crรจme de cacao
  • 20 mlEgg white (pasteurised)
  • 4 dropSaline solution 4:1

    Select and pre-chill a COUPE GLASS.

    Prepare garnish of lemon zest twist and ground nutmeg.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.

    EXPRESS lemon zest twist over the cocktail and discard.
  7. 7
    Dust with freshly grated nutmeg.
