- 30 mlGin
- 15 mlPisco
- 7.5 mlPeach liqueur
- 22.5 mlLemon juice
- 10 mlSugar syrup (2:1)
- 2 dashOrange bitters
- 15 mlEgg white (pasteurised)
Method
- 1Select and pre-chill an OLD-FASHIONED GLASS.
- 2Prepare garnish of lemon zest twist and mint sprigs.
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into ice-filled glass.
- 6EXPRESS lemon zest twist over the cocktail and discard.
- 7Garnish with mint sprigs bouquet.
