Ingredients
- 60 mlVodka
- 60 ml*Special ingredient #1
- 30 ml*Special ingredient #2
- 30 mlKiwi fruit puree
- 30 mlWhipping cream
- 30 mlEgg white (pasteurised)
- Top up with Soda (club soda) water
Method
- 1SHAKE first 6 ingredients with ice and strain into ice-filled glass.
- 2TOP with soda water poured from a height to create a frothy head.
- 3Serve with straws.
- 4<strong>Special ingredient #1</strong> = Lemon sherbet.
- 5Blend the following for a couple minutes and fine strain.
- 6600g Caster sugar.
- 7600g Super strained lemon juice.
- 820g Lemon zest (removed from fruit with Microplane grater).
- 95g Maldon sea salt.
- 10<strong>Special ingredient #2</strong> = Rose water and kiwi syrup.
- 11Blend the following and bottle.
- 125g malic acid.
- 13100ml Catron kiwi liqueur.
- 14100ml Merlet pear liqueur.
- 15100ml Money musk coconut.
- 1625ml Absinthe.
- 175g Maldon sea salt.
- 18100ml Orgeat syrup.
- 1950ml Campari.
- 20200ml Sugar syrup (1:1).
