Ingredients
- 20 mlCognac (brandy)
- 10 mlChartreuse Green
- 5 mlRose petal liqueur
- 15 mlLemon juice
- 5 mlSugar syrup (2:1)
- 10 mlEgg white (pasteurised)
- 60 mlBrut sparkling wine

Select and pre-chill a COUPE GLASS.

Prepare garnish of express and float coin-sized orange zest twist.

Prepare garnish of coin-sized orange zest twist.

SHAKE first 6 ingredients with ice and strain back into shaker.

DRY SHAKE (without ice) to emulsify.

FINE STRAIN into chilled glass.

TOP with sparkling wine by pouring in the centre of the cocktail.

Express orange zest twist over the cocktail and then use as a garnish to cover the hole in the foam left by pouring sparkling wine.
