  • 15 mlGinger liqueur
  • 22.5 mlApple juice
  • 15 mlLemon juice
  • 20 mlEgg white (pasteurised)
  • 2 dashAbsinthe
  • 2 dashAromatic bitters

    Select and pre-chill a COUPE GLASS.

    Prepare garnish of aromatic bitters.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.

    Garnish with drops of aromatic bitters drawn through the foam.
