Ingredients
- 45 mlMezcal
- 15 mlRed bitter liqueur
- 22.5 mlLime juice
- 15 mlSugar syrup (2:1)
- 15 mlEgg white (pasteurised)
- 3 dropSaline solution 4:1
Method
- 1Select and pre-chill an OLD-FASHIONED GLASS.
- 2Prepare garnish of lime slice wheel (dehydrated).
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into ice-filled glass.
- 6Garnish with lime wheel.
