  • 30 mlBourbon whiskey
  • 22.5 mlRye whiskey 50% abv
  • 22.5 mlLemon juice
  • 10 mlHot honey sugar syrup
  • 10 mlHoney and water syrup
  • 15 mlEgg white (pasteurised)
  • 2 dashAromatic bitters
  • 2 dropSaline solution 4:1

    Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.

    Prepare garnish of lemon zest twist and drops of aromatic bitters.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.

    EXPRESS lemon zest twist over the cocktail and discard.

    Garnish with drops of aromatic bitters drawn through the foam head.
