- 30 mlMezcal
- 15 mlWhite overproof rum
- 15 mlFalernum liqueur
- 5 mlMaraschino liqueur
- 22.5 mlLime juice
- 10 mlSugar syrup (2:1)
- 10 mlEgg white (pasteurised)
- 3 dropMargarita Bitters
- 2 dropSaline solution 4:1
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of lime zest twist and dehydrated lime slice wheel.
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice).
- 5FINE STRAIN into chilled glass.
- 6Express lime zest twist over cocktail and discard.
- 7Garnish with dehydrated lime wheel.
