Ingredients
- 60 mlIrish whiskey
- 30 mlLemon juice
- 20 mlSugar syrup (2:1)
- 3 dashAromatic bitters
- 2 dropSaline solution 4:1
- 15 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a DOUBLE OLD-FASHIONED GLASS.
- 2Prepare garnish of lemon zest twist and skewered Luxardo Maraschino Cherry.
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into ice-filled glass.
- 6EXPRESS lemon zest twist over the cocktail and discard.
- 7Garnish with skewered cherry.
