Ingredients
- 45 mlBlanco tequila
- 20 mlLimoncello liqueur
- 15 mlLemon juice
- 10 mlHoney and water syrup
- 3 dropSaline solution 4:1
- 10 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of coin-sized lemon zest twist.
- 3DRY SHAKE all ingredients (without ice) to emulsify.
- 4SHAKE again with ice.
- 5FINE STRAIN into chilled glass.
- 6EXPRESS lemon zest twist over cocktail and float in centre of cocktail as a garnish.
