- 45 mlBlanco tequila
- 20 mlLimoncello liqueur
- 15 mlLemon juice
- 10 mlHoney and water syrup
- 3 dropSaline solution 4:1
- 10 mlEgg white (pasteurised)

Select and pre-chill a COUPE GLASS.

Prepare garnish of coin-sized lemon zest twist.

DRY SHAKE all ingredients (without ice) to emulsify.

SHAKE again with ice.

FINE STRAIN into chilled glass.

EXPRESS lemon zest twist over cocktail and float in centre of cocktail as a garnish.
