  • 50 mlMezcal
  • 22.5 mlLemon juice
  • 22.5 mlOrange juice
  • 15 mlSugar syrup (2:1)
  • 15 mlEgg white (pasteurised)
  • 2 dashOrange bitters
  • 3 dropSaline solution 4:1

    Select and pre-chill a TODDY GLASS.

    RIM glass with Tajín seasoning (moisten outside edge with lime or orange juice and drip into Tajín).

    Prepare garnish of coin-sized orange zest twist.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.

    EXPRESS orange zest twist over cocktail and float as garnish.
