- 7.5 mlSugar syrup (2:1)
- 10 mlEgg white (pasteurised)
- 2 dropSaline solution 4:1
- 10 mlSoda (club soda) water
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of lime zest twist.
- 3SHAKE first 6 ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) and fine strain into chilled glass.
- 5TOP with soda.
- 6Express lime zest twist over the cocktail and use as garnish.
