  • 15 mlOrange-red aperitivo
  • 15 mlOrgeat syrup
  • 22.5 mlLemon juice
  • 15 mlEgg white (pasteurised)
  • 2 dropSaline solution 4:1

    Select and pre-chill a COUPE GLASS.

    Prepare garnish of aromatic bitters (in dropper bottle or atomiser).

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.

    Garish with aromatic bitters dropped onto, or spayed across, foamy surface.
