Ingredients
- 45 mlLight white rum
- 15 mlOrange-red aperitivo
- 15 mlOrgeat syrup
- 22.5 mlLemon juice
- 15 mlEgg white (pasteurised)
- 2 dropSaline solution 4:1
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of aromatic bitters (in dropper bottle or atomiser).
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into chilled glass.
- 6Garish with aromatic bitters dropped onto, or spayed across, foamy surface.
