- 1 1⁄2 fresh Passion fruit
- 45 mlWhite overproof rum
- 22.5 mlLime juice
- 15 mlSugar syrup (2:1)
- 15 mlPassion fruit syrup
- 45 mlBrut sparkling wine

Cut passion fruit in half and scoop out flesh into shaker.

Add next four ingredients, SHAKE with ice and strain into glass filled with crushed ice.
