Ingredients
- 60 mlLight gold rum 1-3yo
- 10 mlAgricole rhum (unaged)
- 10 mlPineapple syrup
- 80 mlPineapple juice
- 15 mlLime juice
- 20 mlCream of coconut
- 4 dropSaline solution 4:1
- 7.5 mlWhipping cream
- 1⁄4 barspoon Xanthan gum (E415)
Method
- 1Select and pre-chill a POCO GRANDE GLASS.
- 2Prepare garnish of pineapple wedge and Luxardo Maraschino Cherry.
- 3DRY BLEND (without ice) first 7 ingredients on a slow setting and add cream and then Xanthan while continuing to blend.
- 4Add 7oz scoop of crushed ice and BLEND some more.
- 5POUR into chilled glass.
- 6Garnish with pineapple wedge on rim skewered with maraschino cherry.
- 7Serve with a straw.
