Ingredients
- 8 fresh Spinach leaves
- 50 mlCachaça
- 7.5 mlMezcal
- 10 mlGinger liqueur
- 20 mlLime juice
- 10 mlOrgeat syrup
- 7.5 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of spinach leaf,.
- 3MUDDLE spinach in base of shaker.
- 4Add other ingredients, SHAKE with ice and strain back into shaker.
- 5DRY SHAKE (without ice) to emulsify.
- 6FINE STRAIN into chilled glass.
- 7Garnish with spinach leaf pegged to rim.
