  • 60 mlOld Tom gin
  • 15 mlLemon juice
  • 15 mlLime juice
  • 22.5 mlSugar syrup (2:1)
  • 1.25 mlOrange flower water
  • 3 dropVanilla extract
  • 22.5 mlEgg white
  • 22.5 mlWhipping cream
  • Top up with Soda (club soda) water

    Select and pre-chill a COLLINS GLASS.

    Prepare garnish of quarter orange wheel (& optional mint sprig).

    SHAKE first 8 ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    SLOWLY POUR two-thirds of the shaker's contents from a higher-than-normal height into a chilled empty glass (no ice in the glass) while simultaneously pouring soda with your other hand. (The cocktail and soda should form a single stream of liquid falling into the glass.).

    As when pouring a Guinness, to achieve a perfect head on a Ramos Gin Fizz, LEAVE TO SETTLE for at least a minute. Ideally, during this settling period, the glass should be placed in a glass-froster/fridge/freezer.

    POUR the final contents of the shaker into the glass. As you do so, the head should rise like a souffle.

    Garnish with quarter orange wheel on rim (& optional mint sprig bouquet).
