- 22.5 mlLemon juice
- 10 mlSugar syrup (2:1)
- 15 mlEgg white (pasteurised)
- 22.5 mlBrut sparkling wine
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of lemon zest twist.
- 3SHAKE first 5 ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into chilled glass.
- 6TOP with sparkling wine.
- 7EXPRESS lemon zest twist over the cocktail and use as garnish.
