  • 15 mlDry vermouth
  • 15 mlLemon juice
  • 10 mlRaspberry syrup
  • 15 mlEgg white (pasteurised)

    Select and pre-chill a COUPE GLASS.

    Prepare garnish of fresh raspberry.

    SHAKE all ingredients with ice and strain back into shaker.

    DRY SHAKE (without ice) to emulsify.

    FINE STRAIN into chilled glass.
  6. 6
    Garnish with raspberry floated in centre of cocktail.
