Ingredients
- 60 mlSpirit
- 30 mlCitrus juice
- 20 mlSugar syrup (2:1)
- 20 mlEgg white
- 8 dropGinseng bitters
- 60 mlSoda (club soda) water

Select and pre-chill a FIZZ OR HIGHBALL (8OZ TO 10OZ) GLASS.

Prepare garnish of quarter lemon slice wheel.

SHAKE first 5 ingredients (all but soda water) with ice and strain back into shaker.

DRY SHAKE (without ice) to emulsify.

FINE STRAIN into chilled glass and place in a freezer to allow the foam head to form a layer.

After a minute or so, slowly POUR soda from a higher-than-normal height to raise the foaming head above the rim.

Garnish with quarter lemon wheel on rim.
