Ingredients
- 45 mlRye whiskey 50% abv
- 22.5 mlLicor 43
- 22.5 mlLemon juice
- 22.5 mlEgg white (pasteurised)
- 110 mlSoda (club soda) water

Select and pre-chill a COLLINS GLASS.

Prepare garnish of coin-sized lemon zest..

DRY SHAKE (without ice) to emulsify.

SHAKE again with ice.

FINE STRAIN into chilled glass. (No ice in the glass.).

TOP with soda to bring the cocktail level with the glass rim.

Leave stand for 45 seconds, then TOP with more soda to raise the foamy head above the rim.

EXPRESS lemon zest twist over the cocktail and use as garnish.
