- 30 mlLemon juice
- 15 mlSugar syrup (2:1)
- 5 fresh Basil leaves
- 15 mlEgg white (pasteurised)

Select and pre-chill a COUPE GLASS.

Prepare garnish of basil leaf and aromatic bitters..

SHAKE all ingredients with ice and strain back into shaker.

DRY SHAKE (without ice) to emulsify.

FINE STRAIN into chilled glass.

Garnish with 3 drops of aromatic bitters and float basil leaf boat.
