Ingredients
- 45 mlMezcal
- 10 mlOrange Curaçao
- 10 mlChilli liqueur
- 10 mlGinger liqueur
- 10 mlPineapple juice
- 30 mlLime juice
- 15 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare dust garnish made with an equal mix of powdered sugar, salt and cayenne pepper.
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into chilled glass.
- 6Dust with pre-mixed sugar, salt and cayenne dust.
