- 50 mlMezcal
- 7.5 mlChartreuse Green
- 7.5 mlCynar/carciofo amaro
- 15 mlLemon juice
- 10 mlSugar syrup (2:1)
- 15 mlEgg white (pasteurised)

Select and pre-chill a COUPE GLASS.

Prepare garnish of grated cinnamon.

SHAKE all ingredients with ice and strain back into shaker.

DRY SHAKE (without ice).

FINE STRAIN into chilled glass.

Dust with freshly grated cinnamon.
