Ingredients
- 45 mlMezcal
- 50 mlPineapple juice
- 22.5 mlCream of coconut
- 22.5 mlOrange juice
- 5 mlTriple sec
- 1⁄4 barspoon Xanthan gum (E415)
Method
- 1Select and pre-chill a COLLINS GLASS.
- 2Prepare garnish of grated nutmeg.
- 3DRY BLEND (without ice) first 5 ingredients on slow setting and then gradually add Xanthan gum while continuing to blend.
- 4Add one-and-a-half 7oz scoops of crushed ice and BLEND some more.
- 5POUR into chilled glass.
- 6Dust with freshly grated nutmeg.
- 7Serve with a straw.
