  • 60 mlCognac (brandy)
  • 7.5 mlOrgeat syrup
  • 15 mlLemon juice
  • 7.5 mlSugar syrup (2:1)
  • 15 mlEgg white (pasteurised)

    Select and pre-chill a COUPE GLASS.

    Prepare raspberries for garnish.

    DRY SHAKE all ingredients (without ice) to emulsify.

    SHAKE again with ice.

    FINE STRAIN into chilled glass.

    Garnish with raspberries.
