Ingredients
- 30 mlGentian liqueur
- 15 mlPear liqueur
- 10 mlMezcal
- 20 mlLemon juice
- 10 mlSugar syrup (2:1)
- 15 mlEgg white (pasteurised)
Method

Select and pre-chill an OLD-FASHIONED GLASS.

Prepare garnish of pear slice (dehydrated).

SHAKE all ingredients with ice and strain back into shaker.

DRY SHAKE (without ice) to emulsify.

FINE STRAIN into ice-filled glass.

Garnish with pear slice.
