- 45 mlOrange-red aperitivo
- 30 mlPisco
- 15 mlLemon juice
- 7.5 mlLime juice
- 10 mlSugar syrup (2:1)
- 15 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of aromatic bitters.
- 3DRY SHAKE all ingredients (without ice) to emulsify.
- 4SHAKE again with ice.
- 5FINE STRAIN into chilled glass.
- 6Garnish with a line of aromatic bitters dashed across surface.
