Ingredients
- 22.5 mlCognac (brandy)
- 22.5 mlBourbon whiskey
- 22.5 mlLemon juice
- 15 mlMacadamia nut syrup
- 15 mlEgg white (pasteurised)
- 4 dropTonka bitters
- 3 dropSaline solution 4:1
Method
- 1Select and pre-chill a TODDY GLASS.
- 2Prepare garnish of aromatic bitters.
- 3SHAKE all ingredients with ice and strain back into shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into chilled glass.
- 6Garnish with drops of aromatic bitters drawn through the foam.
