Ingredients
- 45 mlVanilla vodka
- 15 mlCoconut rum liqueur
- 7.5 mlLime juice
- 22.5 mlPineapple juice
- 7.5 mlEgg white (pasteurised)
- 1.25 mlBlue curaçao liqueur
Method
- 1Select and pre-chill a MARTINI GLASS.
- 2Prepare garnish of pineapple wedge.
- 3SHAKE first 5 ingredients with ice and strain back into the shaker.
- 4DRY SHAKE (without ice) to emulsify.
- 5FINE STRAIN into chilled glass.
- 6POUR the liqueur into the centre of the cocktail. It should sink to create a blue base and leave a blue spot in the centre of the cocktail's frothy head.
- 7Garnish with pineapple wedge on rim.
