Ingredients
- 1⁄2 ring Pineapple (fresh)
- 22.5 mlLight white rum
- 15 mlRuby port
- 22.5 mlDry vermouth
- 15 mlLemon juice
- 15 mlSugar syrup (2:1)
- 2 dashAromatic bitters
- 15 mlEgg white (pasteurised)
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of pineapple wedge.
- 3MUDDLE pineapple in base of shaker.
- 4Add other ingredients, SHAKE with ice and strain back into shaker.
- 5DRY SHAKE (without ice) to emulsify.
- 6FINE STRAIN into chilled glass.
- 7Garnish with pineapple wedge on rim.
