Ingredients
- 45 mlBison grass vodka
- 20 mlLemon juice
- 15 mlPassion fruit syrup
- 15 mlApple juice
- 5 mlSugar syrup (2:1)
- 15 mlEgg white (pasteurised)
- 3 dashAbsinthe
Method
- 1Select and pre-chill a COUPE GLASS.
- 2Prepare garnish of smouldering star anise.
- 3SHAKE all ingredients with ice.
- 4STRAIN back into shaker.
- 5DRY SHAKE (without ice) to emulsify.
- 6FINE STRAIN into chilled glass.
