The Nagpuri (Kamala) orange — small, sweet, and deeply flavoured — is India's most prized orange variety, harvested November through January. GupShup's Nagpur Orange uses blood orange (which shares the sweet-tart intensity of the Nagpuri variety) with mezcal's smoke and pamplemousse (French grapefruit liqueur) for bitterness. The Spicewala citrus salt is a proprietary spice blend from a Chicago-based Indian spice company.
Blood oranges are seasonal (December–March); fresh navel or Cara Cara orange juice works well in other months. Pamplemousse (French grapefruit liqueur) has a more bitter, less sweet profile than Cointreau or triple sec — this bitterness is important as a counterpoint to the blood orange's sweetness.
