Ammi Jaan (meaning 'dear mother' in Urdu — an expression of warmth and home) uses a curry leaf and spice reduction that takes 20 minutes to make but transforms the drink into something unlike any other mocktail you have ever tasted.
The curry reduction can be made in advance and keeps refrigerated for up to a week. Fresh curry leaves (available at Indian grocery stores) are non-negotiable — dried curry leaves have almost no flavour. Guava purée from a can (or blended fresh guava) both work. The drink should taste savoury-first, tropical-second — if it tastes only of guava, increase the curry reduction.
