  • 2cm fresh ginger, peeled and roughly sliced
  • 8 fresh cilantro sprigs
  • Juice of 1½ limes
  • 15ml (½ oz) simple syrup
  • Pinch of kala namak
  • 180ml cold soda water
  • Ice
  • Lime wheel & cilantro sprig to garnish

    MuddleMuddle green chili and ginger in the base of a shaker — be firm, you want the oils out.

    Add herbsClap the cilantro sprigs over the shaker, add them, then add lime juice, simple syrup, and kala namak.

    ShakeAdd ice and shake hard for 10 seconds.

    StrainFine-strain over ice into a tall glass.

About This Drink

Ambassadors Clubhouse opened in Midtown Manhattan as a modern homage to India's colonial-era club culture. Their non-alcoholic programme is built on the principle that zero-proof drinks should carry as much complexity and provocation as their alcoholic counterparts. Baby Bagheera is proof — the green chili heat builds with each sip exactly like a well-made spicy cocktail would.

The heat level is entirely controlled by the chili quantity and how much you muddle. Indian green chilies (hari mirch) are hotter than serranos — use half for a milder drink. The cilantro should dominate the nose: use at least 8 full sprigs. This drink is excellent as a palate cleanser between courses.
