  • 30ml cloudberry jam or preserve (or lingonberry jam)
  • 2 green cardamom pods, seeds crushed
  • 15ml lemon juice
  • 10ml simple syrup
  • Ice
  • Balsamic-pepper strawberry sorbet: 1 small scoop (store-bought strawberry sorbet + 5ml aged balsamic vinegar + cracked black pepper, stirred to combine)
  • Strawberry slice & cardamom pod to garnish

    CrushIn a rocks glass or mixing vessel, lightly crush strawberries with cloudberry jam, cardamom seeds, and simple syrup. Do not over-muddle — leave texture.

Blush & Bashful is the dessert–mocktail crossover on Rania's Spirit-Free menu — a drink that arrives with a small scoop of balsamic-black pepper strawberry sorbet balanced on top, which slowly melts into the berry base as you drink. The name nods to the Dolly Parton reference (Steel Magnolias), but the construction is pure fine-dining: strawberry and cloudberry (a rare Nordic berry with complex acidity) are crushed together with green cardamom, then built on ice. The sorbet adds creaminess, temperature contrast, and a sophisticated vinegar-pepper note. At $15, it's half dessert, half drink.

Cloudberry jam is found in IKEA's food section, Scandinavian specialty stores, or online. Lingonberry jam (also from IKEA) is a good substitute with similar Nordic tartness. The sorbet trick works with any premium strawberry sorbet — the balsamic and pepper transform it into something more complex. Don't skip the pepper; it elevates the sorbet from sweet to savory-complex.
