  • 1 large unripe (green) mango — or 3 tbsp raw mango pulp/aamchur paste
  • ½ tsp roasted cumin powder
  • 2 green cardamom pods, seeds ground fine
  • Juice of 1 lime
  • 1 tbsp sugar
  • Pinch of kala namak
  • 6 fresh mint leaves
  • 150ml cold sparkling water
  • Crushed ice

    Cook mangoIf using fresh mango: boil the whole mango for 15 minutes until soft. Cool, peel, and scoop out the pulp. Or use 3 tbsp raw mango pulp directly.

    BlendBlend mango pulp with cumin, cardamom, lime juice, sugar, kala namak, and mint until smooth.

    StrainStrain through a fine sieve.

    ServePour over crushed ice. Top with sparkling water. Garnish with mint and a lime wedge.

The raw mango is everything — do not substitute ripe mango. Frozen raw mango pulp from Indian grocery stores is an excellent shortcut. Roasted cumin (bhuna jeera) is different from raw cumin: dry toast cumin seeds in a pan until fragrant, then grind. The flavour is earthier, smokier, and more complex. Make a large batch of the concentrate (without sparkling water) and keep refrigerated for up to 5 days.
