Raw mango, roasted cumin, cardamom & citrus — GupShup NYC
GupShup (meaning 'gossip' or 'chit-chat' in Hindi/Urdu) is one of NYC's most ambitious modern Indian restaurants, with a cocktail programme that treats Indian ingredients with the same seriousness as premium spirits. Kairi Panna (raw mango cooler) is the non-alcoholic anchor of their drinks menu — the reference point that tells every Indian diner they are somewhere that understands the source material.
The raw mango is everything — do not substitute ripe mango. Frozen raw mango pulp from Indian grocery stores is an excellent shortcut. Roasted cumin (bhuna jeera) is different from raw cumin: dry toast cumin seeds in a pan until fragrant, then grind. The flavour is earthier, smokier, and more complex. Make a large batch of the concentrate (without sparkling water) and keep refrigerated for up to 5 days.
GupShup (meaning 'gossip' or 'chatter' in Hindi and Urdu) is a celebration of Indian social culture through food and drink. The cocktail menu draws from the full breadth of the subcontinent — paan-inspired drinks, lassi riffs, spiced old fashioneds — with an energy that matches the name. One of the most vibrant Indian drinking experiences in New York City.
