  • 3 tbsp butterfly pea flower tea (steep ¼ cup flowers in 1 cup boiling water for 10 min, then cool completely)
  • 2 tbsp fresh passion fruit pulp (or 45ml passion fruit juice)
  • Juice of 1 lime
  • 2 tsp honey or simple syrup
  • 120ml ginger ale
  • Crushed ice
  • Passion fruit half & edible flower to garnish

    Brew teaSteep butterfly pea flowers in boiling water for 10 minutes. Cool completely — the tea will be deep indigo blue.

    BuildAdd passion fruit pulp, lime juice, and honey to a tall glass. Stir.

    IceFill with crushed ice.

    Layer teaPour the cooled butterfly pea tea over the back of a spoon — it should float as a blue layer over the yellow passion fruit base.

    TopTop with ginger ale. Present the drink in layers. When your guest stirs, it transforms from blue to purple to magenta.

Thumkaa's Passion Paradise Fly combines two popular South Asian drink traditions: the passion fruit punch that appears across Goan beach shacks and South Indian restaurants, and the butterfly pea flower colour-change technique borrowed from Thai bar culture. The result is a drink that performs as well as it tastes.

The colour change is dramatic — blue (alkaline tea) meets the acidic lime/passion fruit and shifts to purple then magenta. For the full effect, pour the tea last and do not stir before serving. The ginger ale gives a gentle fizz that the colour-change tea alone lacks. Butterfly pea flower tea is available at Asian and Indian grocery stores and widely online.
