  • Rosemary syrup: simmer 100ml water, 100g sugar, 2 rosemary sprigs for 5 minutes. Cool & strain.
  • 60ml fresh orange juice
  • 20ml rosemary syrup
  • 120ml Vinada Sparkling Rosé (or any dealcoholised sparkling rosé)
  • Ice
  • Fresh rosemary sprig & orange half-wheel to garnish

    SyrupMake rosemary syrup in advance: simmer, steep 10 min, strain, cool.

    BuildFill a wine glass with large ice cubes.

    Juice & syrupPour orange juice and rosemary syrup into the glass. Stir briefly.

    Sparkling winePour Vinada Sparkling Rosé gently down the side of the glass to preserve bubbles.

    StirStir once very gently with a bar spoon — do not over-agitate.

    GarnishRest a sprig of fresh rosemary against the glass rim and slide an orange half-wheel into the drink.

Vinada Sparkling Rosé is available from Whole Foods and wine shops that carry NA wines. Thomson & Scott Noughty Sparkling Rosé is an excellent substitute. If you cannot find dealcoholised sparkling rosé, use a premium sparkling white grape juice with a squeeze of lemon — different but workable.
